148. Raicilla — Mexican Agave Distillate from the Puerto Vallarta Region

Raicilla is a Mexican agave distillate, like mezcal, obtained by the distillation of various types of agave, such as Agave maximiliana, Agave inaequidens, Agave valenciana, Agave angustifolia and Agave rhodacantha among others, agaves that are harvested in the territory covered by the raicilla denomination of origin.

As a finished product, it is a colorless liquid, although its tone can vary when aged in wooden containers, or when it is barrelled without aging.

In 2014, production was 50 thousand liters by about 70 traditional producers. By production volume, the largest producers of the beverage are the municipalities of Mascota and Cabo Corrientes around Puerto Vallarta. The distilleries of this beverage are known as tabernas.
